Maybe Mom Had the Right Idea

Eggplant Zucchini Parmigiana

Sliced Eggplant lightly breaded and cooked in olive oil
Sliced Zucchini
Go nuts with Italian spices
Homemade sauce
thinly sliced mozzarella

Okay, maybe it doesn't sound healthy... but it is. When you refuse to use any of the following:
Trans Fat
High Fructose Corn Syrup
Preservatives/chemically altered foods
Non-organics
Anything from a bottle/bag/box...

I mean really, c'mon. Of all the exquisite fine French cooking there is out there, or all the decadent Tapas joints, or any sushi containing fish imported directly from the Japanese seas, who can argue with mom's classics? Who cares if their ratio of carb/protein/fat is not proportionate to your "rent-a-trainers" little pamphlet on health. Don't tell me there's too much sugar in tomato sauce! Maybe there's too much sugar in your tomato sauce, if you're eating Ragu.

Shut up and enjoy it. Most foods that aren't healthy, originally emerged from a healthy recipe. Now they're just made to last.
